RECIPE: Eggs, Asparagus and Avocado

Recipe


Ingredients 
Eggs 
Rye bread
Salmon trimmings (optional)
Asparagus
Avacado 
Chilli flakes (optional) 

Method
1.  Poach eggs (boil water, once water is boiling create a whirl with the ware using a spoon and crack the egg in the middle of the whirl)

2.  Meanwhile, whilst the eggs are boiling, steam or boil asparagus for 10 mins

3.  Chop up the avocado and toast rye bread

4.  Place avacado on top of the rye bread and then add the poached egg 

5. Season to taste with chilli flakes or other seasoning


Tip
Whilst the egg is boiling, you can add vinegar or salt to help the egg white set around the yolk.

Place the poached egg on a kitchen towel to soak up the water
